Delicious and Healthy

What do you think of when it comes to parmesan? If it's still the flaky, fine stuff that comes in a tall green tube, it's time to make a change. I wrote awhile back about Parmigiano-Reggiano, the real parmesan cheese that comes in 80-pound wheels aged in Italy. Recently, I photographed a hunk of parmesan that featured an amazing segment of rind with "Parmigiano" clearly displayed in pin-dot indents as well as part of the seal of Parmigiano-Reggiano.

Not only is real parmesan one of the most delicious things on earth, with its salty, rich, and sharp flavors, but it can be healthy for you too! If you're watching your girlish figure, one of the most detrimental things can be creamy, cheesy concoctions. For instance, alfredo pasta is devilish and should be avoided at all costs. If you want to add a bit of cheese to a meal and loads of flavor, simply purchase a hunk of Parmigiano-Reggiano and grate away on top of your next menu item. When at the grocery store, look for a cheese and rind yellow in color and not too dry. Skip anything white or nearly white, unless of course it's Pecorino Romano. And when you get it home, try not to devour the entire wedge!
