Tastes of Fall

I have heard so much excitement lately about the return of Starbucks Coffee's Pumpkin Spice Latte. There's something so delicious and rich about pumpkin combined with the complex and intoxicating flavors of cinnamon, nutmeg, cloves, and ginger. Anything with these "pumpkin pie" seasonings is almost sure to be a winner in my book. At the same time, I'm still cautious to not let the rich flavors of Fall weigh me down and send my weight up.

My solution? This healthy pumpkin butter recipe courtesy of Danica's Daily, a collection of healthy recipes online that celebrate clean eating. But don't let that premise fool you - this butter is thick, rich, and delicious. And it couldn't be easier to make, provided that a bit of stirring isn't too much work.

Fresh Pumpkin Butter


Healthy Pumpkin Butter

1 15-oz can pumpkin puree
1/2 cup dark agave syrup
1 Tbsp Pure Maple Syrup
1/2 tsp Pure Vanilla Extract
1 tsp Cinnamon
1/2 tsp. Ground Ginger
1/4 tsp. Ground Cloves
1/8 tsp. Ground Nutmeg
Pinch of salt

1. Combine the pumpkin, agave nectar, maple syrup and vanilla extract in a small saucepan over medium heat, mixing until well combined.

2. Stirring constantly, cook for about 15 minutes, or until thickened.

3. Stir in the spices and salt, and cook for an additional 5 minutes.

4. Remove the pan from heat, and transfer your pumpkin butter to a small bowl or jar. Let cool completely before covering and refrigerating.

  1. This sounds delicious Eric! I never even considered how one might make pumpkin butter-- it seemed like a mysterious substance, but it sounds very doable! And I do so love finding ways to incorporate pumpkin into my fall baking in ways that are healthier than eating pie! Love those little baby ball jars too, they're the perfect size for pumpkin butter.
